Ingredients:
3 large (750g) cleaned squid hoods
1 cup Corn flour
2 tsp Sea salt
1 tsp Cracked black pepper
1/2 tsp Smoked paprika
1/2 tsp Garlic powder
Vegetable oil, for deep frying
Fresh red chili, thinly sliced, for garnish
Fresh basil leaves, a handful (optional, for garnish)
Lemon wedges, for serving
3 tbsp Supercharged Crispy Chilli Oil
1/2 cup Mayonnaise
For the Dipping Sauce:
- Mix the mayonnaise with the Supercharged Crispy Chilli Oil in a bowl. Adjust the ratio based on your heat preference.
Instructions:
- Cut each squid hood in half lengthways. Using a sharp knife score inside in a criss-cross pattern. Cut each piece in half lengthways. Cut each strip crossways into 4 pieces. Pat dry with paper towel.
- In a large mixing bowl, combine corn flour, sea salt, black pepper, smoked paprika, and garlic powder.
- Toss the squid in the seasoned corn flour mix until they are well coated.
- Heat oil in a deep fryer or large saucepan. Fry the squid in batches to avoid overcrowding, until golden and crispy (about 2-3 minutes).
- Use a slotted spoon to transfer the fried squid to a paper towel-lined plate to drain excess oil.
- In the same oil, quickly fry the basil leaves until crispy (about 20 seconds), then drain on paper towels.
- Serve the crispy squid hot, garnished with fried basil leaves, fresh chili slices, and lemon wedges on the side.
