Ingredients:

3 large (750g) cleaned squid hoods
1 cup Corn flour
2 tsp Sea salt
1 tsp Cracked black pepper
1/2 tsp Smoked paprika
1/2 tsp Garlic powder
Vegetable oil, for deep frying
Fresh red chili, thinly sliced, for garnish
Fresh basil leaves, a handful (optional, for garnish)
Lemon wedges, for serving
3 tbsp Supercharged Crispy Chilli Oil
1/2 cup Mayonnaise

For the Dipping Sauce:

  • Mix the mayonnaise with the Supercharged Crispy Chilli Oil in a bowl. Adjust the ratio based on your heat preference.

Instructions:

  1. Cut each squid hood in half lengthways. Using a sharp knife score inside in a criss-cross pattern. Cut each piece in half lengthways. Cut each strip crossways into 4 pieces. Pat dry with paper towel.
  2. In a large mixing bowl, combine corn flour, sea salt, black pepper, smoked paprika, and garlic powder.
  3. Toss the squid in the seasoned corn flour mix until they are well coated.
  4. Heat oil in a deep fryer or large saucepan. Fry the squid in batches to avoid overcrowding, until golden and crispy (about 2-3 minutes).
  5. Use a slotted spoon to transfer the fried squid to a paper towel-lined plate to drain excess oil.
  6. In the same oil, quickly fry the basil leaves until crispy (about 20 seconds), then drain on paper towels.
  7. Serve the crispy squid hot, garnished with fried basil leaves, fresh chili slices, and lemon wedges on the side.
  8. Offer the Supercharged Crispy Chilli Oil Mayo as a dipping sauce.
